The Milsom is set in a landmark Grade II listed building in the heart of historic Bath. The restaurant has a grand and inviting feel to match the warm ambience of this lovely venue. With a reputation for service excellence by knowledgeable and friendly staff, combined with quality food, this restaurant is a local favourite. 

We speak to General Manager, Ian Sedwell, to find out more...

Congratulations on the opening of The Milsom. For those who have yet to come to the venue, what can they expect?

 

Thank you so much. The Milsom is a stunning grade II listed Georgian building, and you can find us on Milsom street. We are a gastro-pub and boutique hotel, as well as a bar and restaurant, we also have nine luxury hotel rooms!  We want our guests and diners to feel like they are at their home away from home when they come and visit.

 

The restaurant and bar has had a major top-to-toe refurbishment, which is sympathetic to it’s historical roots. How would you best describe the interior and atmosphere?

 

The Milsom actually used to be an old bank, and we have restored some of the original features from the building which is pretty spectacular. We have two tone timber flooring which really sets the scene for a relaxed atmosphere, as well as a selection of contemporary artwork that sits alongside the original features of the building. In a nod to its previous life we’ve got mirrored timber panelling, mosaic effect flooring and hints of brass features.

 

We want to create a really grand and inviting feel. Our bar is the focal point, and historically was the cashier desk of the bank! We’ve added touches of brass and a striking arched back bar – it really is a showstopper!

You opened the doors at the start of May, how has the first month been received?

 

We’ve had such a positive welcome from our local neighbours on Milsom Street and our guests who have enjoyed our beautiful dining room and outside courtyard. 

 

So what can we find on the menu?

 

We pride ourselves on our modern classic menu that is filled with fresh and seasonal dishes. Our snacks include a Salt Beef Scotch Egg with kimchi aioli, Thai Prawn Toast and Warm Sourdough with Whipped Feta, pistachio, chimichurri. For those who like to share, we have some antipasti style plates too! Our starters range from Crispy Lamb Belly with cherry molasses and pea salsa verde, Laverstock Buffalo Mozzarella with grilled artichokes and sour cherry harissa to a classic 80s dish of Crayfish & Prawn Cocktail.

 

The main menu is epic too with Tiger Prawn Linguine, Aged Ayrshire Pork Cutlet with Truffle potato and a carrot and apricot chutney, plus a Sweet Potato & Black Bean Salad.

I love seasfood, so for me the Scallops with Bath chaps and a side of Oysters is the way to go.

I understand there is a bespoke cocktail menu too?

 

We have an incredible bar team at The Milsom and our mixologists have curated a cocktail menu that is amazing. Our signature cocktails are Dolce Vita Spritz; amaro santoni, prosecco and soda Water, Flower Market Sour; Hendricks gin with lychee liqueur and a Darjeeling and jasmine syrup topped with lemon juice and prosecco and Rum Dance; Havanna Spiced Rum, Bacardi carta blanca, watermelon syrup, lime juice, vanilla and topped with pineapple juice.

 

The cocktail that really hits the spot for me is Our Flower Market Sour, it is a floral delight! Especially with the lovely weather we are having.

You have accommodation available too, in the shape of nine luxury rooms. Can you describe the rooms available.

 

Our bedrooms promise another level of comfort. Classic fabrics adorn the new headboards and the accents of polished chrome, plush velvet and a rich, warm colour palette elevate the rooms and create a homely feel. We’ve even got a grand roll top bath in our suites which is super luxurious.

 

Other than the main menus, what else will The Milsom offer?

 

We have some really exciting things in the pipeline including our classic afternoon tea, featuring sandwiches, scones and cakes, designed to be enjoyed by two. There is also a tasty Sunday Roast Menu, Full Breakfast Menu, Kids Menu and a Set Menu for guests to explore and enjoy. We have a lovely garden tucked away too, which is really a hidden gem in the city for alfresco drinks and dining.
