This Morning's Phil Vickery creates a simple meal plan for those living with diabetes.

Phil Vickery is a resident chef on ITV's This Morning and has also appeared on Saturday Cookbook and Ready Steady Cook. He has won numerous accolades, including a Michelin star at the Castle Hotel in Somerset, is the author of Save Money Good Diet, Ultimate Diabetes Cookbook, Pork and Game, as well as the bestselling Seriously Good! Gluten-free series. 

 

Anyone who has Type 2 Diabetes will know that the prospect of always eating the right foods can be a daunting one. In his new book ‘Diabetes Meal Planner’, Phil Vickery has teamed up with allergen food developer and scientist, Bea Harling, to show that planning what you eat, and having some go-to recipes that you know are good for you, can make life with diabetes so much easier.

'We have also taken into consideration shopping, so have kept ingredients to a minimum. Some recipes are very simple. We make no excuse for that – as a wise chef once said to me, ‘The fewer ingredients, the less you can hide.’ 

 

'The overriding factor is the need to eat a nutritionally well-balanced diet, keeping an eye on calorie intake if you’re managing your weight [the nutritional values listed under each recipe are per portion]. But it also goes without saying that keeping active is crucial. I’m no doctor, but my brother is, so we often chat about diets, and he stresses the need for a combination of moderate exercise and a balanced diet.’
